Ingredients:

To marinate the chicken:

For the sauce:

  • 1½ Tbsp. Butter
  • ½ Tbsp. Olive Oil
  • ½ cup Onion, chopped
  • 1 Garlic Clove, minced
  • 1 Ginger, grated
  • 1 Garam Masala
  • ½ Tsp. Red Chili Powder
  • ¼ Tsp. Cayenne Pepper
  • ¼ Tsp. Salt
  • 150g Tomato Sauce
  • 2 Tomato Paste
  • 1 Cup Cooking Cream
  • Fresh Coriander for garnishing

Method:

  1. To marinate the chicken: Combine yogurt, lemon juice, turmeric, garam masala, cumin, garlic, ginger and chicken cubes in a big bowl. Toss well to combine, cover and refrigerate for at least 12 hours.
  2. To prepare the sauce: Heat ½ Tbsp. of butter and the olive oil in a large skillet over medium heat.
  3. Add the onion and sauté until softened then add the garlic and ginger and cook for 1 minute to fragrant. Add the garam masala, chili powder, cayenne and salt. Stir and cook until fragrant.
  4. Increase the heat to medium-high and add the marinated chicken cubes and sauté until the chicken is no longer pink on the outside.
  5. Add the tomato sauce and tomato paste and simmer for 15 to 20 minutes, stirring occasionally until the chicken is cooked through.
  6. Reduce the heat, and add the cooking cream and remaining butter, and warm gently until the butter is melted.
  7. Transfer to a big serving dish over hot cooked rice and garnish with fresh coriander and serve.
