Place the Sadia Chicken Thighs, Drumsticks and Breasts on a clean work surface. Remove and discard the skin and bone. Chop the chicken meat with the salt and garlic until it is a coarse mince. Place the chicken in a bowl, add the chilli and shallots and mix well.
Add the fish sauce and lime juice to the chicken mixture and stir to combine. Heat a large frying pan over medium-high heat, add the chicken mince and stir-fry until almost cooked. Pour in the corn flour (dissolved in water), and stir to thicken the juices.
Transfer onto a serving plate and scatter over the herbs and spring onion. To serve, spoon onto the lettuce leaves and sprinkle over a few toasted shallots. (Ingredients 15-16)
