• 4 cups Cubed, cooked Sadia Whole Chicken (see basic stock recipe)
  • 2 teapoons Olive oil
  • 1 Onion, chopped
  • 1 Carrot, peeled and diced
  • 1 Stick celery, finely diced
  • 2 teaspoons Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Ground turmeric
  • 2 teaspoons Sugar
  • 750 g Pumpkin, peeled and cubed
  • To taste Sea salt and ground pepper
  • 2 litres Chicken stock
  • 200 ml Cooking cream
  • 1 cup Croutons



Heat oil in a large saucepan, add onion, carrot, celery and cook over medium heat until soft.


Add spices and cook until fragrant, approximately 1 minute, then add the pumpkin.


Add the chicken stock and bring to a boil. Simmer for approximately 15-20 minutes or until the pumpkin is tender.


Process soup until smooth, stir in the Sadia Whole Chicken cubes and cream and gently reheat.


Season with salt and pepper. Serve garnished with croutons.
