For mint raita, mix together ½ cup thick plain yoghurt and 2 tablespoons thinly sliced mint leaves. Season with sea salt, to taste.
Top the roti bread with chopped lettuce, sliced mango and cucumbers. Scatter the sliced onion over this.
Divide the chicken strips amongst the roti, drizzle with the mint raita, roll up and serve.
