Preheat the oven to 200°C. Preheat a grill plate, brush the eggplant slices with 2 tablespoons of olive oil and cook for 2 minutes each side or until golden brown and softened.
Cook the Sadia Signature Breaded Chicken Escalope according to the pack instructions.
Place the chicken escalopes in a single layer in an ovenproof dish. Top each one with a slice of tomato and grilled eggplant, and then top with a slice of mozzarella. Place in the preheated oven for 5 minutes, or until the cheese has melted. Remove from the oven and garnish with basil leaves to serve.
