Olive oil | ½ cup |
Lemon juice | ⅓ cup |
Lemon zest | 1 tsp |
Salt | 2 tsp |
Pepper | 1 tsp |
Garlic, minced | 1 tbsp |
Dried oregano | 2 tsp |
Fresh parsley, chopped | 2 tbsp |
Fresh lemon wedges for garnish |
Prepare the Marinade:
Preheat the oven to 200°C.
In a large bowl, whisk together olive oil, lemon juice, lemon zest, salt, pepper, garlic, and oregano.
Marinate the Chicken and Potatoes:
Add Sadia Chicken Thighs and halved baby potatoes to the bowl. Toss everything well to coat evenly.
