Sadia Chicken Drumsticks | 900g |
Olive oil | 2 tbsp |
Onions, finely chopped | 100g |
Carrots, finely chopped | 2 |
Celery sticks, finely chopped | 2 |
Cumin powder | ½ tsp |
Pinch of saffron | |
Bay leaf | 1 |
Chicken stock | 600ml |
Haricot beans, drained | 2 tins |
Salt and pepper, to taste | |
Double cream | 120ml |
Fresh coriander |
Brown the Sadia Chicken Drumsticks:
Heat 1 tablespoon of olive oil in a frying pan. Add Sadia Chicken Drumsticks and brown. Set aside.
Cook the Vegetables:
In the same pan, add the chopped onions and cook until soft. Add the chopped carrots and celery.
Simmer the Stew:
Return the browned chicken to the pan. Add cumin powder, saffron, and bay leaf. Pour in the chicken stock and bring to a boil.
Reduce the heat to a simmer and cover for 35-40 minutes.
Add Beans and Cream:
Return the baking dish to the oven and bake for another 30 minutes or until the chicken is fully cooked and the vegetables are tender.
Serve and Enjoy:
Garnish with fresh coriander before serving.
